Coconut Almond Chocolate Chip Ice Cream

When Shelly of Cookies and Cups and Kristan of Confessions of a Cookbook Queen announced that they were hosting a second creative recipe contest I was on board to participate. What made it exciting for me is that the theme was to take a recipe that either of them have made and put our own spin on it. That’s right up my alley. A lot of my recipes have been developed by taking recipes I like and adapting them to make them my own.

For quite some time I have been wanting to recreate my favorite ice cream. It’s my local grocery store’s brand and it’s so yummy. It’s a coconut flavored ice cream with almonds and chocolate chips. I don’t own an ice cream maker so I needed a recipe that was easy and didn’t require one. Shelly’s 2 ingredient ice cream聽was the perfect recipe to use and adapt.

I’m so happy with how it came out. It’s not an exact copy of the grocery store’s ice cream but it’s pretty darn close. It’s so rich and creamy. A little definitely goes a long way which is great for my waistline because I’ve been trying to shed some pounds. The base recipe is so simple and you can add in whatever you like. I definitely recommend giving it a try. The possibilities for flavors are endless.

Coconut Almond Chocolate Chip Ice Cream
Adapted from Cookies & Cups
Print Recipe

2 cups heavy cream, very cold
1 {14 oz} can sweetened condensed milk
1/2 cup coconut milk {be sure to mix the can well before opening}
3/4 tsp coconut flavoring {I used Lorann’s Coconut Emulsion} *
1/2 cup chopped almonds
1/2 cup mini chocolate chips

Whisk heavy cream in your mixer on high speed until it becomes stiff {approximately 1 – 1 1/2 minutes}. Fold in sweetened condensed milk, coconut milk and flavoring. Add in almonds and mini chocolate chips. Transfer to a container with a lid and freeze for at least 6 hours.

*Note: if you are not a fan of artificial flavoring then you can omit the coconut flavoring and add a little more coconut milk. Without the flavoring the ice cream has a subtle coconut flavor. I love coconut flavor so I added the flavoring. It reminds me of the coconut popsicles I had as a kid.
