Lemon Pistachio Sandies {Simply Sweet Saturdays}

It’s week three of Simply Sweet Saturdays link party. This week I’m sharing a recipe for Lemon Pistachio Sandies.

When I was researching what to make for today’s post I came across a little yellow piece of paper with my mom’s writing on it. It was her pecan sandies recipe. I immediately knew that this is what I wanted to make but put my own twist on them.

Growing up my mom used to always make sandies because they’re my dad’s favorite. I used to help her make them. We would shape them like crescent moons and my favorite part of helping was dipping them in the powdered sugar. Making these cookies brought back memories.

I took the cookies to work and got lots of compliments on them. The lemon flavor is delicate and goes well with the pistachios.

Lemon Pistachio Sandies
Print Recipe

1 cup salted butter* {softened}
1/3 cup sugar
2 teaspoons water
2 teaspoons lemon extract {I used Lorann’s lemon emulsion}
2 cups flour
1 cup chopped pistachios*

Cream butter and sugar. Add water and lemon extract. Mix well. Blend in flour and nuts. Shape dough into balls. Bake at 350 degrees for approximately 15 minutes or until slightly golden brown. Let cookies cool completely and roll in powdered sugar.

Yield: 3 dozen cookies depending on size

* I always use salted butter in my baking and the pistachios I used were salted because that’s all the grocery store had. If you have salt issues used unsalted butter.

  11. Thank you for this recipe! Was a great hit as one of a few Christmas Eve dinner party desserts. I made some alterations: subbed the water and lemon extract for a combo of rum, orange liquor and vanilla. Added Cardamom (1.5 tsp but I think it could’ve taken a bit more) and added the zest of 2 oranges.
