I recently purchased a muffin top pan and have had muffins on the brain ever since. I finally got a chance to put the pan to use with these triple chocolate muffin tops.
They combine dutch process cocoa powder, milk chocolate chips and semi-sweet chocolate chips. The addition of chocolate jimmies as a garnish adds that extra little something. They are chocolatey goodness my friends.
My favorite part of a muffin is the top so now I can enjoy a muffin without the added bulk of eating a full one. These are in no way trying to mimic the healthy muffin tops you can purchase at the super market but I may play around with the recipe in the future and come up with a healthier version.
Ingredients
- 2 cups unbleached all-purpose flour
- 3/4 cup dutch process cocoa powder
- 3/4 cup granulated sugar
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup milk chocolate chips plus more for garnish
- 1/2 cup semi-sweet chocolate chips
- 1 1/2 cup milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 1/2 teaspoon vanilla
- chocolate jimmies for garnish
Instructions
- Preheat oven to 400 degrees.
- Prepare muffin top pan with non-stick spray or shortening.
- In a large bowl combine the flour, cocoa powder, sugar, baking soda, salt and chocolate chips.
- In another bowl combine the milk, oil, eggs and vanilla. Whisk until the yolks are broken and everything is well incorporated.
- Fold the wet ingredients into the dry ingredients. Do not over mix but make sure all the dry ingredients are mixed in.
- Fill each section of the pan with approximately 1/4 cup batter. I used a #16 scoop.
- Sprinkle extra chocolate chips & jimmies on top for garnish.
- Bake for approximately 8-10 minutes or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for about 10 minutes and then move to wire rack to finish cooling completely.

They tasted even better the next day. I individually heat sealed mine and froze them so I can have them ready to take to work whenever I’m craving a muffin. You just can’t go wrong with a chocolate muffin.

Oh my..these look yummy! I need to get a muffin top pan so I can make them! Individually heat seal these! What a genius idea…I just make muffins and eat them non stop until they are gone…your way makes way more sense!

I had no idea you could buy a muffin top pan! There is nothing better than the top of a muffin and these sound so good!! I’m printing this out for the next time the kids come home for a visit. Those grandbabies LOVE them some chocolate (grandma does too ….)
