Slice of Life Sundays: 2-2-14

Hey there. Hope you’re having a great weekend. We’ve made it into February. It’s challenge time again and this month’s theme will be “Love”. I’m late as always. I just think it’s in my nature to procrastinate. I’m frantically trying to get my project done so I can share it with you this week. Hopefully early in the week rather than later.

I’m sure most of you will be watching the Super Bowl. I won’t be. I lost my love for football a long time ago. Not just football but basketball too. I may tune in to the halftime show because I love Bruno Mars but other than that I’m not watching.

I fell a little short this week on making dinners every night but I gave it a valiant effort. The muscle spasm in my shoulder is still flaring up off and on and when I’m not feeling well I just don’t want to do a thing. Hence the lateness with the challenge.

Copycat Panera Broccoli Cheese Soup 

This soup was great. I was worried that my husband wouldn’t like it, because he gets funny about foods that have a cream sauce, but he loved it. In fact the next day he mentioned how much he really liked it and then a couple of days later he said “man that soup was good”. In my book it’s a winner. If my husband is happy then I’m happy.

Cilantro Lime Shrimp

Shrimp with lime & cilantro–enough said. So easy and good!

Skinny Tex Mex Casserole

I really enjoyed this meal. I only had medium Rotel on hand so it was a bit spicy for me. I didn’t notice when I went shopping that I picked up medium instead of mild. I’m a whimp these days with heat. I did cheat and add regular cheese on top so it lost some of it’s skinny but when it comes to cheese I need the real deal. The only other thing I would change, and this is totally personal preference, is to use less chili powder next time I make it. This was another winner with the hubby. What I consider winners are meals that he vocalizes more than once how much he liked them.

This was my first time refinishing furniture and I’m really proud of how everything came out. It’s such an awesome feeling to sit at a table and know that you painted it and made it look the way it does.

    • Thank you so much Mary! You don’t know how much that means to me. Sometimes I feel like I’m talking to the wind and I’m not sure if I’m posting things that people care about but then I get a comment like yours and it reassures me to keep doing what I’m doing. :)

    Oh…and I have an idea for the Love Challenge, but it will be late…as usual…seems to be a trend with me. I have a month to link up…or at least until the 14th, right?

    I’m not a football fan AT.ALL! But, we had fun with friends and family… and yummy food! All of these dishes look amazing! Have a great Monday!
