Slice of Life Sundays: 1-26-14


Warning: This post contains spoilers for American Horror Story and Revenge.

We got ice in Texas on Friday. Well here in Houston we got ice. Further north some got snow. It’s a rare occurrence for us to get ice but when we get it the city seems to come to a halt. Texans really aren’t equipped to drive on ice. We just don’t have the experience. I was fortunate to be off from work and not have to deal with it.

This cold weather we’re getting is no good for fibromyalgia. I’ve been having to see my chiropractor more frequently because I’ve been in a lot of pain. My best friends right now are a heating pad & heating blanket. I’m really looking forward for warm weather to come back.

Did you watch this week’s episode of American Horror Story? Wow! There was quite a bit of blood shed. Madam La Laurie cut Marie into pieces. Queenie kills La Laurie. Then the shocker was the Axe Man killing Fiona. Is she really dead? I don’t think so. He said he fed her to the alligators but we didn’t see it. She is the Supreme. Do you really just kill a Supreme that simply with an axe. Nope. I think she’ll be back. Axe Man got his when the witches joined together and stabbed him over and over and over. Finally, Cordelia’s eyes, or lack there of, was enough to give me nightmares. Ewwww!

Revenge has not been disappointing. With Emily’s plan not going off like it was supposed to she is left to come up with a new plan to get her revenge against the Graysons. Daniel is responsible for sterilizing her. If her father’s death wasn’t enough to maker her hate this family the fact that she can no longer have children has set her on a path for serious revenge. She wants to kill them all. Then there’s the whole Niko situation. My beloved Aiden thought he had sent her on her merry way to avenge the death of her father but she found her father’s katana under Aiden’s bed and discovered he is the killer. Watch out Aiden she’s coming for you.  I hate that I have to wait until March to see new episodes but it’s worth the wait.

Crock Pot Balsamic Pork Roast

I really enjoyed this pork roast. The flavor was great and the fact that it’s a crock pot meal is a plus. I like dump and go type recipes. The only downside for me is that when I get home from work I’ve been gone for a total of 12 hours. Even though my crock pot switches to warm I sometimes get crispy pieces of meat. I guess I need to add more liquid to prevent this. I also don’t like that meat sits in its fat all day. Just my personal preference. I would definitely make this again though.

Spinach and Feta Stuffed Chicken Breasts

This recipe was a real winner. I will definitely be making it again. The only change I made was that I’m not a huge dill fan so I didn’t want to buy fresh dill and instead I just used 1 teaspoon of dried dill I had on hand in my pantry. I’ll probably use less next time or omit it. I really love sun-dried tomatoes so I think next time I make this I will add some to the recipe. Spinach and feta pair well with tomato sauce so sun-dried tomatoes will compliment the flavors well.

Loaded Philly Cheesesteak Baked Potato

Another winner here. I mean how could you go wrong with a baked potato with steak, peppers and onions? You can’t! The hubs doesn’t like mushrooms so I left them out of the recipe. Now this is a skinny recipe but I just want to keep it real with you. Instead of a 5 1/2 ounce potato mine were closer to 10 ounces. Lol! Also, the recipe doesn’t call for butter but I added butter to mine because I felt like my potatoes were dry. If you’re not too concerned about keeping this a skinny recipe then I would suggest buttering your potato after you cut it and then load the toppings on.

I have my shopping list ready for recipes I want to try this week. Let’s hope I get to make them all. Whenever I’m not feeling 100% I get real lazy.

  1. Oh my…all that food looks YUMMY! I am not much of a cook…I am more of a heat and go type of gal. You have inspired me to bust out the crockpot…I am not a fan of pork..but Mr. Cookie Puzzle loves it.

    American Horror Story! WOW just wow… excited for Wednesday…but sad knowing it will come to an end.

  2. Oh Melissa, these dinners look marvelous! I really need to get cooking too. It really helps with your fibro, to make homemade. Have you considered using cooking foil in the crock pot, you could even crumple some up to elevate the pork. I had a consultant at the fitness center tell me to cook from scratch long before my neurosurgeon found my broken vertebrae, and I could tell an immediate difference, but I was just too tired or hurt too much to cook. Somehow, preservatives aggravate the fibro symptoms. You may have a spinal issue, it is in my honest opinion, what causes the radiating pain diagnosed as fibro. In stead of finding the culprit, they (your regular MD) diagnose fibro. The day they repaired my life long broken vertebrae at the base of my spine(from infancy so my body didn’t know any different until the disc gave way), my fibro magically went away. Can you believe Revenge is making us wait until March to continue?! There have been quite a few twists and turns. My husband and I turn to each other and go, who wrote this, is it the same people who wrote LOST? That’s our joke. LOL And is Emily really sterile? I didn’t hear any official tell her that, only the Graysons.

  3. Another great post! I don’t know how you do it all! My Fibro has been bad lately too. I also have Lupus and Neuropathy so I’m just screwed! Anyway, I was going to suggest either putting a timer on your Crockpot or getting one that has a delayed start option. Also you can get a rack that fits inside to lift your food so it is not sitting in the oil & juices. Although I think that is partly what makes Crockpot cooking so tender. I hope you feel better and have a great week! Stay warm more bad weather is coming!
