Hello my sweet friends. Hope you’re having a good weekend. I missed my Slice of Life Sundays post last weekend because I was working on refinishing a table and chairs for the breakfast area of my kitchen. It was a lot of work but I’m happy with the results. I plan on putting together a post with the all the details soon.
I’m pretty sure that working on this project was the cause of a muscle spasm in the shoulder blade area of my back. My chiropractor said that I had a pulled rib. Whatever I had was very painful and annoying. Two adjustments later I’m feeling much better.
I got back in the kitchen yesterday to work on a recipe to share with you. I’ll post it soon. I have another recipe that I want to play around with today and I want to work on some decorated cookies for Valentine’s Day. I was in a bit of a funk for awhile after the holidays but I’m starting to feel motivated again. If y’all have any requests for things you’d like to see me work on please feel free to comment below and let me know. I have a list of things that I want to get to soon but I’m always looking for inspiration.
I’m trying hard to get back into cooking dinners again. When I was taking cookie & cake orders regularly I got lazy in the dinner department. Dinners consisted of take out or things that could be heated up very easily. Now that I only take limited orders I need to break the bad eating habits and get back on track.
This week I made two dinners that I found through Pinterest.
Ramen Vegetable Soup - My husband really enjoyed this soup and so did I. We are big fans of scallions and cilantro so we loaded them on. I had never had Sriracha before and let’s just say I’m hooked. Next time I want to drizzle in whisked eggs to make it an egg drop Ramen vegetable soup.
Oven Toasted Ravioli – This was another great and simple recipe. The ravioli tasted great and they would have tasted better if I had marinara sauce to dip them in. Note to self: when you are going to make a recipe make sure you have all the ingredients. I somehow envisioned marinara sauce in my pantry when we were shopping and said I don’t need to pick any up. Wrong!
I started a Pinterest board for recipes that have Points Plus or nutritional values listed in them. Being on Weight Watchers it’s a challenge to make good dinners and have to calculate the points. Recipes with values listed just make things a whole lot easier. If you’re interested in these types of recipes then follow my board.
