Magic Drop Cookies

I work in accounting and each month, on the last day of the month, we have to stay late to get our books closed. We work through lunch and enjoy a catered meal. If we’re lucky someone will bake a dessert and bring it in. This past month I was in the mood to bake so I brought in these awesome cookies that I like to call Magic Drop Cookies.

I was aiming to recreate the taste of Magic Bars in a drop cookie. All the cookies were gobbled up so I would say they were a hit. I originally made them with unsweetened coconut but the next time I made them with sweetened coconut because I think they needed that extra punch. Either way they are good and I hope you enjoy them.

Magic Drop Cookies

1 cup {2 sticks} salted butter, melted
1 1/4 cup brown sugar
3/4 cup sugar
2 tsp vanilla
2 eggs
2 1/2 cups unbleached flour
2 tsp baking soda
2 cups crushed corn flakes
3/4 cup coconut flakes
3/4 cup chopped pecans
1 cup milk chocolate chips

Preheat oven to 375 degrees.

Combine flour and baking soda in a bowl and set aside. In the bowl of your mixer combine melted butter & sugars. Add vanilla and eggs and mix well. Add flour & baking soda mixture and mix until combined. Stir in corn flakes, coconut, nuts and chocolate chips.

Using a #30 scoop {2 tablespoons} place cookies on parchment lined baking sheets. The cookies will spread so I only put 9 cookies on each sheet. Bake 8-10 minutes or until light brown. Allow to cool on cookie sheet for 2-3 minutes then transfer to a cooling rack to cool completely.

Yield: 36 cookies
