Strawberry Butttercream Recipe {Simply Sweet Saturdays}

Before I share my recipe with you I would like to let you know that after a lot of soul searching I have made the hard decision to end Simply Sweet Saturdays. Today will be the last one. I don’t know if they will be gone forever but at least for the foreseeable future. If you read my personal story and follow my blog then you know that I mention my health and doctors appointments from time to time. Since I wrote that post things have progressed and I experience a lot more pain than just in my wrist. I’ve been told that I have Fibromyalgia but I wanted a second opinion so I went to see a neurologist last week. After several tests I found out that I have bulging discs in my spine, in various spots, from my neck to my tailbone as well as arthritis. She believes that based on other symptoms I described that I could still have Fibromyalgia in addition to the disc problems. Thankfully it is not at a point that surgery is needed but she suggested that I get chiropractic care.

Having a full-time job it’s tough for me to meet blogging deadlines. I started Simply Sweet Saturdays even though I knew it would be hard because I wanted to get exposed to new bloggers and not just bloggers in the sweets world. I have gotten introduced to some very talented bloggers and I thank all of you that linked up each week. Having to fit in chiropractic treatments into my already busy life is not going to allow me to be able to meet a weekly deadline without a lot of added stress. I need to be able to post on the blog whenever I can without the pressure of having to come up with something to share each week on a specific day. Thanks for your understanding.
Now let’s get to the fun stuff. Today I’d like to share a recipe with you for strawberry buttercream but this recipe could also be adapted to raspberry or whatever other flavor you think will work. I’m not a huge fan of adding fresh fruit to icing because the water content in the fruit can really effect the consistency so I like to flavor my icing with preserves. I get a lot of compliments on my buttercream so I simply adapted my recipe with strawberry preserves. Hope you enjoy it.

Strawberry Buttercream
1/2 cup {1 stick} salted butter
1/2 cup solid vegetable shortening {I use Crisco}
1/3 cup seedless strawberry preserves
2 tsp clear vanilla extract {I use Wilton}
4 cups powdered sugar {approximately 1 lb}
1 tbsp milk
In the bowl of your electric mixer add the butter, shortening and preserves and mix until smooth and creamy. Add vanilla and mix until combined. Add powdered sugar and milk and mix for 6-8 minutes on medium speed until light and fluffy.
*I was able to pipe 24 cupcakes with rose swirls. Amount may vary based on how much icing you use per cupcake.

  1. I am sad to see Simply Sweet Saturdays end, but I am happy that you are taking the time to take care of YOU! Health comes first….always.

    What a great idea adding preserves to frosting…I never would have thought of that…I have some homemade blackberry preserves that would be wonderful to use…YUMMY!

    I hope you feel better soon and never need surgery.
    I am sorry that Simply Sweet Saturday will end, but you must take care of yourself.

    I love the idea of adding preserves to bc frosting, I am not too fond of buttercream, but this twist may work very well!

    I am sorry that you are discontinuing Simple Sweet Saturdays, but I completely understand. You must take care of yourself!! Thinking about you and hope that you are able to get some relief for your pain.

  6. I am sad to hear about Simply Sweet Saturdays going away, but I think you are making the best decision for yourself. I have been trying to focus on reminding myself that blogging is meant to be fun. So I will post when I can. And there may be long periods of time when I don’t have much to say. But I am sending hugs to you!!

    it seems nice one, how long can keep this icing outside? can not keep in refrigerator right?!

    • Hi Jasmine. I personally would not leave the icing out more than a day. Sugar is a natural barrier to bacteria but using jam which needs to be refrigerated I would not leave it out too long.
