Wackadoodles {Simply Sweet Saturdays}

You know the saying “when life hands you lemons you make lemonade”? Well my new motto is “when life gets wacky make some wackadoodles”. They’re crazy good. Lol!

I’m a total stress eater. All you have to do is take one look at my waistline to figure it out. When things get hairy in life I turn to food for comfort and anything chocolate is like a friend that never lets you down. Last Saturday things got wacky in my life. One of my dogs, Zoe, got ill for the third day in a row and we took her to the vet. Long story short she is fine now but we spent a lot of time and money to never find out what caused her to get sick in the first place. We still think she ate a bird but the vet didn’t seem to think so. Life with a beagle is never dull.

Weekends are when I really try to get a lot of my baking and blogging done and I was robbed of that time. This weekend I’m looking forward to a stress free weekend so I can get some things done that I want to do. At least that’s the plan but in case things go south I have some Wackadoodles on hand. These cookies are a combination of chocolate, peanut butter and pretzels. They will satisfy both a sweet and salty craving.

Wackadoodles

2 c flour
1/4 c cocoa powder {I used Hershey’s Special Dark}
1 tsp baking soda
1 c salted butter {softened}*
1/4 c sugar
3/4 c light brown sugar
1 tsp vanilla
1 small {3.9 oz} pkg instant chocolate pudding
2 eggs
1 {10 oz} pkg peanut butter chips {I used Reese’s}
1/2 – 3/4 c chopped pretzels {add to your liking}

Preheat oven to 375 degrees.

Combine the flour, cocoa powder and baking soda. In the bowl of your mixer add the butter, sugars, vanilla and pudding mix and beat until smooth and creamy. Then beat in the eggs until combined well. Add the flour mixture. Stir in the peanut butter chips and pretzels. Drop about 2 inches apart on an ungreased baking sheet. Bake for 8-10 minutes.

Yield approximately 3 dozen cookies depending on how big you scoop them. I used a #30 scoop {2 tbsp} and got 34 cookies.

*I always bake with salted butter. Because of the salt in the pretzels you may want to use unsalted butter.
