Chocolate Dipped Pink Heart Cookies {Simply Sweet Saturdays}

It’s time for another Simply Sweet Saturdays link party. This week I’m sharing a quick and easy idea for last minute Valentine’s Day cookies.

These chocolate dipped pink hearts came about as a happy accident because my original plan was a fail. I was inspired by these cookies from Lizy B. I wanted to see if I could use an embossing folder like the one I used for my fondant heart cookies to emboss a design on some colored dough. Everything went well until I baked the cookies. The design pretty much totally baked out. I guess you need to press a design really deep into your dough for it to work.

I was left with colored heart cookies which would make great last minute cookies for Valentine’s Day but I wanted to kick them up a notch. I texted my friend Stephanie to tell her about my fail and she said “why don’t you sandwich buttercream between two cookies and put sprinkles all around the sides?”. Great idea! I thought to myself  ”I have some leftover buttercream in the freezer”. Then a light bulb went off. Why don’t I make things even simpler and just dip half the cookie in chocolate and put sprinkles on it? I absolutely love them! Thanks Stephanie for helping me get to my plan B.
